Chr Hansen has launched its Viniflora® FrootZen™ yeast for wine production.
The Viniflora FrootZen is a frozen, direct inoculation Pichia kluyveri yeast for winemakers to produce aromatic and fresh white or rosé wines. The frozen yeast offers increased flavour and aroma, and it can be used by winemakers to naturally increase the microbial diversity of ferments in a reliable and consistent way.
According to Chr Hansen, its Viniflora FrootZen helps to bring out the flavour precursors contained in grape juice more efficiently than traditional yeasts available on the market. It also increases the mouth-feel of the final wine product and delivers long-lasting fruit flavours.
Viniflora FrootZen is the result of a working partnership between Chr Hansen and wine researchers at the University of Auckland, New Zealand.
The frozen yeast will be first available in New Zealand in 2011, and is expected to generate particular interest within Sauvignon Blanc, Chardonnay, Pinot Gris and Riesling wines.
